Ingredients

  • 2 cans young green jackfruit in water or brine, drained and rinsed
  • 1 cup BBQ sauce, plus extra for serving
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slider buns
  • 1 cup green cabbage, shredded
  • 1 apple, julienned
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Prepare the Jackfruit: In a pot, heat olive oil over medium heat. Add the jackfruit, smoked paprika, onion powder, garlic powder, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until the jackfruit is tender and starts to shred.
  2. Add BBQ Sauce: Stir in 1 cup of BBQ sauce and cook for another 5-10 minutes until the jackfruit is well coated and heated through.
  3. Make the Slaw: In a bowl, combine shredded cabbage, julienned apple, apple cider vinegar, maple syrup, salt, and pepper. Toss well to combine and let it sit for at least 10 minutes to meld the flavors.
  4. Assemble the Sliders: Toast the slider buns if desired. Pile the BBQ jackfruit onto the bottom half of each bun, top with a generous amount of apple slaw, and finish with the top half of the bun.
  5. Serve and Enjoy: Serve the sliders warm with extra BBQ sauce on the side for dipping.
