These Mango and Cucumber Rice paper rolls are a colorful blend of fresh ingredients, including ripe mango and crunchy cucumber, wrapped in rice paper. Served with a luscious spicy peanut sauce, they offer a balance of sweetness, crunch, and a hint of spice.

Ingredients

  • 8 rice paper sheets
  • 1 ripe mango, thinly sliced
  • 1 cucumber, julienned
  • 1 cup fresh mint leaves
  • 1 cup fresh basil leaves
  • 1 cup cooked rice vermicelli noodles (optional)
  • 1/2 cup peanuts, crushed for garnish

Instructions

  1. Prepare the Ingredients: Slice the mango and cucumber, and gather the mint and basil leaves.
  2. Soak the Rice Papers: Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds, until soft. Remove and lay it flat on a clean surface.
  3. Fill the Rolls: In the center of the rice paper, layer some mango slices, cucumber, mint, basil, and rice noodles if using. Be careful not to overfill.
  4. Roll Them Up: Fold the sides of the rice paper over the filling, then roll it tightly from the bottom up, like a burrito. Repeat with remaining rice paper sheets and filling.
  5. Make the Spicy Peanut Sauce: In a bowl, mix together peanut butter, soy sauce, lime juice, garlic, and chili paste. Adjust the consistency with water if necessary.
  6. Serve: Place the rice paper rolls on a platter and serve with the spicy peanut sauce on the side. Garnish with crushed peanuts.
