Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas or green beans
  • 4 cloves garlic, minced
  • 2-3 Thai bird’s eye chilies, chopped (adjust to taste)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce or a vegetarian alternative
  • 1 tablespoon sugar
  • 1 cup fresh Thai basil leaves
  • Cooked jasmine rice for serving

Instructions

  1. Prep the Tofu: Press the tofu to remove excess moisture and then cut it into cubes.
  2. Cook the Tofu: In a large pan or wok, heat vegetable oil over medium-high heat. Add the tofu cubes and fry until golden brown and crispy on all sides. Remove and set aside.
  3. Sauté the Vegetables: In the same pan, add a bit more oil if needed. Add minced garlic and chopped chilies, sautéing until fragrant (about 30 seconds). Then, add sliced bell peppers and snap peas, cooking until just tender.
  4. Combine Ingredients: Return the crispy tofu to the pan. In a small bowl, mix soy sauce, oyster sauce, and sugar. Pour this sauce over the tofu and vegetables, stirring well to combine, and cook for another 2-3 minutes.
  5. Add Basil: Turn off the heat and gently fold in the Thai basil leaves, allowing them to wilt from the residual heat.
  6. Serve: Serve the stir-fry hot over steamed jasmine rice.
