Ingredients
- 1 1/2 cups (190 g) all-purpose flour
- 1/2 cup (60 g) icing sugar (confectioners' sugar), plus extra to dust
- 1/4 teaspoon fine salt
- 1 teaspoon ground cardamom (from about 5-6 green pods)
- 3/4 cup (170 g) unsalted butter, softened but still cool
- 1 teaspoon vanilla extract
- 1/3 cup (40 g) shelled pistachios, finely chopped or crushed
Instructions
- Whisk the flour, icing sugar, salt and ground cardamom together in a medium bowl.
- In a large bowl, beat the softened butter and vanilla until smooth and creamy, about 1 minute.
- Add the dry ingredients to the butter and mix with a spatula or your fingertips until a soft, shaggy dough just comes together. Do not overwork it.
- Gently knead in the crushed pistachios, reserving a spoonful for the tops.
- Turn the dough out onto a sheet of parchment, shape it into a log about 5 cm (2 inches) in diameter, and roll it up tightly. Chill in the fridge for at least 30 minutes, or up to 3 days.
- Heat the oven to 160 C (325 F) and line a baking sheet with parchment.
- Slice the chilled log into rounds about 1 cm (1/2 inch) thick and arrange on the baking sheet, spacing them 3 cm apart.
- Press a few of the reserved crushed pistachios into the top of each cookie.
- Bake for 16-18 minutes until pale golden at the edges; the centres should still look soft. Cool on the sheet for 10 minutes, then transfer to a wire rack.
- Dust lightly with icing sugar once fully cool.
