- 1 cup (225 g) unsalted butter, softened
- 3/4 cup (165 g) packed light brown sugar
- 1/4 cup (50 g) granulated sugar

- 2 teaspoons vanilla extract

- 1 cup (150 g) raisins
Instructions
- Heat the oven to 180 C (350 F) and line two baking sheets with parchment paper.
- In a large bowl, beat the softened butter and both sugars together until light and fluffy, about 3 minutes.
- Beat in the eggs one at a time, then the vanilla, until smooth.
- In a separate bowl, whisk the flour, cinnamon, baking soda and salt together.
- Add the dry ingredients to the butter mixture and fold until just combined; do not overmix.
- Stir in the rolled oats and raisins until evenly distributed.
- Scoop rounded tablespoons of dough onto the prepared sheets, spacing them about 5 cm (2 inches) apart.
- Bake for 10-12 minutes until the edges are set and lightly golden while the centres still look slightly soft.
- Cool on the sheets for 5 minutes, then transfer to a wire rack to cool completely.
