Ingredients
- 1 medium head of cauliflower (about 700 g), cut into bite-sized florets
- 80 g all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon fine salt
- 120 ml cold water (plus a splash more if needed)
- 120 g panko breadcrumbs
- 3 tablespoons olive oil
- Fresh thyme or parsley, to serve
Instructions
- Heat the oven to 220°C (425°F) and line a large baking tray with baking paper.
- Bring a large pot of salted water to a boil. Add the cauliflower florets and simmer for 4 minutes. Drain well and pat dry with a clean tea towel.
- In a bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder and salt. Whisk in the cold water until smooth and thick — roughly the consistency of pancake batter.
- Put the panko breadcrumbs in a shallow dish and stir in the olive oil so the crumbs are lightly coated but still loose.
- Dip each floret in the batter, letting the excess drip off, then roll in the panko and press gently to coat. Place on the baking tray in a single layer.
- Bake for 22–25 minutes, turning once halfway, until the nuggets are deeply golden and crisp all over.
- Scatter with fresh thyme or parsley and serve hot with your favourite dipping sauce.
