Yes, these brownies have vegetables in them — and that’s exactly why they’re so good. Grated zucchini melts into the batter as it bakes, adding moisture and a fudgy, almost chewy texture without a hint of its own flavour. It’s the classic “secret” that makes these squares stay soft for days.

The zucchini replaces much of the fat and adds structure, so these brownies come out dense and intense rather than cakey. A generous depth of cocoa and handful of dark chocolate chunks make sure the chocolate stays front and centre. Nobody will ever guess the green ingredient.

This is one of the easiest desserts you’ll make: melt, whisk, fold, bake. The batter comes together in a single bowl with no mixer, and the result is a tray of squidgy, glossy-topped squares that are perfect with a glass of cold milk or a scoop of vanilla ice cream.

Ingredients

  • 1 medium zucchini (about 250 g), finely grated
  • 180 g (1 1/2 cups) all-purpose flour
  • 60 g (3/4 cup) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 200 g (1 cup) granulated sugar
  • 120 ml (1/2 cup) neutral oil (sunflower, vegetable or light olive)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 120 g (3/4 cup) dark chocolate chunks or chips
  • 2 tablespoons water, if needed

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line a 20 cm (8-inch) square baking tin with parchment paper.
  2. Grate the zucchini on the fine side of a box grater, then squeeze it gently in a clean cloth to remove excess liquid. You should have about 1 packed cup.
  3. In a large bowl, whisk the flour, cocoa powder, baking powder and salt. In a separate bowl, whisk the sugar, oil, eggs and vanilla until smooth and glossy.
  4. Pour the wet mixture into the dry ingredients and fold until almost combined. Add the grated zucchini and most of the chocolate chunks and fold just until the batter comes together and looks glossy — don't overmix.
  5. Spread the batter evenly in the prepared tin and scatter the remaining chocolate chunks over the top. If the batter looks very thick, stir in a tablespoon or two of water before tipping it in.
  6. Bake for 20 to 24 minutes, until the top is shiny and a toothpick inserted in the centre comes out with just a few moist crumbs. Let cool completely in the tin before slicing into squares.

Cook’s tips

  • Squeezing the zucchini well is important — too much water makes the brownies gummy instead of fudgy.
  • Pull them out at the earlier end of the timing range for a gooier middle; they set further as they cool.
  • For extra richness, fold in a spoonful of espresso powder or a handful of toasted walnuts.

Substitutions

  • For a dairy-free version, use dairy-free chocolate chunks and swap the eggs for 2 flax eggs (2 tablespoons ground flaxseed whisked with 5 tablespoons water).
  • Courgette works wherever it's called zucchini; both are the same vegetable.
  • Replace the chocolate chunks with raisins or chopped dates for a fruitier note.

Storage & reheating

Store the brownies in an airtight container at room temperature for up to 4 days — the zucchini keeps them moist longer than a standard brownie. They also freeze well for 2 months.

FAQ

Can you taste the zucchini in these brownies?

No. Zucchini is almost flavourless, so it adds moisture and soft texture without any vegetable taste — the chocolate is the only flavour you’ll notice.

Do I need to peel the zucchini?

No, the skin is thin and soft. Just wash it, grate it finely, and squeeze out the excess water before folding it into the batter.

Can I make these gluten-free?

Yes. Swap the all-purpose flour for a 1-to-1 gluten-free flour blend and follow the recipe as written.
