Thai Coconut Tapioca Pudding with Grilled Pineapple
Silky coconut tapioca pearls topped with caramelized grilled pineapple and toasted coconut for a tropical dessert-for-breakfast bowl.

The real magic happens on top: thick pineapple rings are grilled (or seared in a hot pan) until their natural sugars caramelize into golden, jammy edges. Finished with a shower of toasted coconut flakes, each bowl tastes like sunshine — creamy, fruity, and just indulgent enough to feel like a treat.
Serve it warm, at room temperature, or chilled straight from the fridge. It’s naturally vegetarian, easy to scale, and the pineapple can be grilled ahead for stress-free mornings.
Ingredients
- 1/2 cup small pearl tapioca (not instant)
- 2 1/2 cups full-fat coconut milk
- 1/2 cup water
- 1/4 cup granulated sugar
- 1/4 teaspoon fine sea salt
- 1 teaspoon vanilla extract
- 1 fresh ripe pineapple, peeled, cored, and cut into 1/2-inch-thick rings
- 1 tablespoon neutral oil or melted coconut oil, for grilling
- 1/4 cup unsweetened coconut flakes, toasted
- Fresh mint leaves, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions
- In a medium saucepan, combine the tapioca pearls, water, and 1 1/2 cups of the coconut milk. Let sit for 10 minutes to soften slightly.
- Place the saucepan over medium heat and bring to a gentle simmer, stirring frequently with a wooden spoon to prevent sticking. Cook for 12–15 minutes, until the pearls are fully translucent and tender, stirring often and scraping the bottom.
- Stir in the sugar, salt, and remaining 1 cup coconut milk. Cook for 3–4 minutes more, until the sugar dissolves and the pudding thickens slightly. Remove from heat and stir in the vanilla extract. The pudding will thicken further as it cools.
- While the pudding cooks, heat a grill pan or outdoor grill over medium-high heat. Brush the pineapple rings lightly with oil. Grill for 3–4 minutes per side, until deep golden grill marks appear and the fruit softens and caramelizes. Transfer to a plate and cut into bite-sized pieces.
- Spoon the warm or chilled tapioca pudding into bowls. Top with the grilled pineapple, toasted coconut flakes, and mint leaves if using. Serve with lime wedges on the side for squeezing.
Cook’s tips
- Stir the pudding frequently while cooking; tapioca sinks and can scorch on the bottom of the pan.
- The pudding thickens considerably as it cools. If it becomes too stiff after chilling, loosen with a splash of coconut milk or water.
- For the deepest caramelization, use a ripe pineapple and avoid moving the rings too soon on the grill.
Substitutions
- Canned pineapple rings (drained and patted dry) can replace fresh; grill them briefly just to warm and char.
- Light coconut milk works but yields a thinner pudding; reduce the water to 1/4 cup.
- Maple syrup or coconut sugar can stand in for granulated sugar.
Storage & reheating
Store leftover pudding in an airtight container in the refrigerator for up to 3 days; keep grilled pineapple separately and reheat gently or enjoy cold.
Frequently asked questions
Can I use instant tapioca instead of small pearls?
No, instant tapioca has a very different texture and cooking time. This recipe is developed for small pearl tapioca, which gives the characteristic chewy, translucent pearls.
Is this pudding served warm or cold?
Both work beautifully. Serve it warm straight from the pot for a cozy dessert, or chill it for a few hours for a firmer, breakfast-friendly pudding.
How do I toast coconut flakes?
Spread them on a dry skillet over medium-low heat and stir constantly for 2–3 minutes until golden and fragrant, or bake at 325°F (165°C) for 5–7 minutes, watching closely.
Can I make this ahead of time?
Yes. Cook the pudding and grill the pineapple up to 2 days ahead. Store separately in the refrigerator and assemble just before serving.
