This turmeric scrambled tofu is the breakfast you didn't know you needed. Golden, creamy, and packed with umami, it's a plant-based take on classic scrambled eggs that will convert even the most devoted egg lovers. The earthy warmth of turmeric pairs beautifully with the crisp bite of spring onion and the gentle heat of fresh chilli, creating a dish that's both comforting and exciting.

Perfect for busy mornings or lazy weekend brunches, this scramble comes together in just 15 minutes. Serve it piled onto buttered toast, tucked into warm flatbreads, or alongside roasted potatoes and a handful of fresh greens. It's a versatile, satisfying meal that works just as well for a quick lunch as it does for breakfast.

What makes this recipe truly special is the texture – the tofu is crumbled into small, curd-like pieces, then gently sautéed until it's fluffy and golden, with just the right amount of crisp edges. The key is to press the tofu well and let it cook undisturbed at first, so it browns beautifully before you start breaking it up more.

Ingredients

  • 1 block (14 oz / 400 g) extra-firm tofu, pressed
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black salt (kala namak) or regular salt, to taste
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons nutritional yeast (optional, for cheesy flavor)
  • 3 spring onions, thinly sliced, whites and greens separated
  • 1 fresh red chilli, seeded and finely chopped (adjust to taste)
  • 1/4 cup (60 ml) unsweetened soy milk or oat milk
  • 1 tablespoon soy sauce or tamari
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Press the tofu: wrap the block in a clean kitchen towel and place a heavy object (like a cast-iron skillet) on top for 10–15 minutes to remove excess water. Alternatively, use a tofu press. Once pressed, crumble the tofu into bite-sized, uneven pieces – some larger, some smaller – and set aside.
  2. Heat the olive oil in a large non-stick skillet over medium heat. Add the chopped yellow onion and cook for 3–4 minutes, until softened and translucent. Stir in the garlic and cook for another minute until fragrant.
  3. Add the spices: sprinkle in the turmeric, smoked paprika, cumin, black salt, and black pepper. Stir constantly for 30 seconds to toast the spices and release their aroma.
  4. Add the crumbled tofu to the skillet, spreading it out in an even layer. Let it cook undisturbed for 3–4 minutes, allowing the bottom to turn golden and slightly crisp. Then use a spatula to flip and break it up, cooking for another 3–4 minutes until the tofu is evenly golden and heated through.
  5. Pour in the soy milk and soy sauce, then sprinkle the nutritional yeast (if using). Stir well to combine, letting the liquid absorb into the tofu. Cook for 2–3 more minutes, until the scramble is creamy and no liquid remains.
  6. Stir in the white parts of the spring onions and the chopped chilli. Cook for 1 minute, then turn off the heat. Fold in the green parts of the spring onions, reserving a few for garnish.
  7. Taste and adjust seasoning – add more salt or chilli if desired. Serve immediately, garnished with fresh cilantro or parsley and the reserved spring onion greens.

Cook’s tips

  • For a fluffier scramble, use medium-firm tofu instead of extra-firm – just press it for a shorter time.
  • Don't skip the black salt (kala namak) – it gives an eggy, sulfuric flavor that makes this dish taste remarkably like scrambled eggs.
  • Make it a meal: serve over toasted sourdough, in a breakfast burrito, or with a side of crispy roast potatoes.

Substitutions

  • Use coconut oil or vegan butter instead of olive oil.
  • Replace soy milk with any unsweetened plant milk, or use water for a lighter version.
  • If you don't have fresh chilli, add 1/2 teaspoon of chilli flakes.

Storage & reheating

Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a skillet with a splash of plant milk to restore creaminess.

FAQ

Can I use silken tofu for this recipe?

Silken tofu will result in a much softer, more custardy texture – it won't hold its shape as well. For a classic scrambled egg texture, stick with extra-firm or firm tofu.

What can I use instead of nutritional yeast?

Nutritional yeast adds a cheesy, savory note. If you don't have it, simply omit it – the dish will still be delicious, but you might want to add a little more salt or a splash of soy sauce.

Is this recipe gluten-free?

Yes, if you use tamari or a gluten-free soy sauce. Ensure all other ingredients are certified gluten-free, as some spices may contain traces.

How do I press tofu without a tofu press?

Wrap the tofu in a clean dish towel, place it on a plate, and set a heavy skillet or a few cans on top. Let it sit for 10–15 minutes, then pat dry.
