Chana Masala
A classic North Indian chickpea curry simmered in a spiced tomato-onion gravy with ginger and garam masala. Ready in about 40 minutes and packed with flavor.

This version keeps things simple and pantry-friendly. Canned chickpeas work beautifully here, and the key is to really cook down the onions and tomatoes until the oil separates — that's what gives chana masala its deep, rounded flavor. Serve it with basmati rice, roti, or naan, and a spoonful of yogurt or vegan yogurt on the side if you like.
The dish is naturally vegan and gluten-free as written, and it reheats even better the next day. Feel free to adjust the chili to your heat preference, and don't skip the final garam masala — it's what makes chana masala taste like chana masala.
Ingredients
- 2 tablespoons neutral oil (such as sunflower or grapeseed)
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 green chili, finely chopped (adjust to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14-ounce) can chopped tomatoes
- 2 (15-ounce) cans chickpeas, drained and rinsed (about 3 cups cooked)
- 1 teaspoon garam masala
- 1 teaspoon salt, or to taste
- 1/2 teaspoon sugar (optional, to balance acidity)
- 1/2 cup water, plus more as needed
- 1 tablespoon lemon juice
- Fresh cilantro, chopped, for garnish
Instructions
- Heat the oil in a large pan or Dutch oven over medium heat. Add the cumin seeds and let them sizzle for 30 seconds, until fragrant.
- Add the onion and cook for 6–8 minutes, stirring often, until soft and golden brown.
- Stir in the garlic, ginger, and green chili. Cook for 1 minute until fragrant.
- Add the ground coriander, turmeric, ground cumin, and cayenne (if using). Stir and cook for 30 seconds to toast the spices.
- Pour in the chopped tomatoes. Cook for 6–8 minutes, stirring occasionally, until the tomatoes break down and the oil starts to separate from the masala.
- Add the chickpeas, salt, sugar (if using), and 1/2 cup water. Stir well and bring to a simmer.
- Reduce the heat to low and simmer uncovered for 10–12 minutes, stirring occasionally. Mash a few chickpeas against the side of the pan to thicken the gravy. Add a splash more water if it looks too thick.
- Stir in the garam masala and lemon juice. Taste and adjust salt.
- Garnish with fresh cilantro and serve hot with rice, roti, or naan.
Cook’s tips
- Mashing some of the chickpeas helps thicken the sauce without adding cream.
- For deeper flavor, cook the onions until they are properly browned — this takes a few extra minutes but is worth it.
- If you have time, let the curry sit off the heat for 5 minutes before serving; the flavors meld.
Substitutions
- Use 3 cups cooked chickpeas instead of canned if you have them.
- No fresh ginger? Use 1 teaspoon ground ginger, added with the dry spices.
- For a milder curry, omit the green chili and cayenne.
Storage & reheating
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of water if needed.
Frequently asked questions
Can I use dried chickpeas instead of canned?
Yes. Soak 1 cup dried chickpeas overnight, then boil until tender (about 60–90 minutes). Use them in place of the canned chickpeas.
Is chana masala spicy?
It has a gentle warmth from the spices and green chili. You can adjust the heat by reducing or omitting the chili and cayenne.
What do you serve with chana masala?
Basmati rice, roti, naan, or even toasted sourdough. A dollop of plain yogurt or vegan yogurt balances the spices.
Can I make chana masala ahead of time?
Absolutely. It tastes even better the next day. Cool and refrigerate for up to 4 days, then reheat gently.
