Ingredients

  • 100g mature cheddar cheese, grated
  • 3 tablespoons fresh chives, finely chopped
  • 180ml whole milk, plus extra for brushing
  • 1 large egg, beaten (for glazing)

Instructions

  1. Preheat the oven to 220°C (200°C fan) and line a baking tray with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and mustard powder if using.
  3. Add the cold butter cubes and rub into the flour with your fingertips until the mixture resembles fine breadcrumbs.
  4. Stir in the grated cheddar and chopped chives.
  5. Make a well in the centre and pour in the milk. Mix with a knife or your hands until a soft dough forms. Do not overwork.
  6. Turn the dough out onto a lightly floured surface and gently knead just 2-3 times to bring it together.
  7. Pat the dough into a round about 2.5cm thick. Use a 6cm round cutter to stamp out scones, re-rolling scraps once.
  8. Place the scones on the prepared tray, spacing them apart. Brush the tops with beaten egg.
  9. Bake for 12-15 minutes until risen and golden brown.
  10. Transfer to a wire rack to cool slightly. Serve warm.
